Jessica Simpson New Weight Watchers Girl

So it appears that Jessica Simpson has jumped on the Weight Watchers bandwagon to become a new spokesperson for the weight loss program.  She is attempting to shed her baby weight gain in order to get back into her working weight range.

Nothing was reported about what this means for Jennifer Hudson and if she will continue to be Weight Watchers resident spokesperson or if Simpson will replace her.

Not sure how I feel about this.  I am an avid Weight Watcher and I love the fabulosity that Jennifer Hudson has brought the to the table over the last year or so.

Weigh & Pay Yogurt…its Everywhere

About a year ago I was introduced to something new, well new to me, weigh and pay yogurt.  We had a new yogurt shop pop up in our richy part of town and the hubby, kiddos and I loved it.  It was such a fun place to go, try  new flavors and let the kids have fun choosing their toppings.

Since then we have had oodles of yogurt shops just like the first one pop up all over the place, they are taking over!

I live in Lafayette, LA not a huge city but big enough to have a major State University, multiple movie theaters and lots of festivals, events etc.  With that being said I didn’t realize that our population warrants 5, yes you heard right, 5 weight and pay yogurt places.

Let’s face it, these places are very similar if not the same.  They all have a cutesy, name and color logo, they all offer similar flavors ranging from an original tart to some off the wall flavor like Taro Root (which I tried BTW and it was delish) and they all have a large selection of toppings ranging from fruit to cereal, candy and more.

It just seems odd to me that my city would have 5 of these locations farily closely to each other…I guess people in Lafayette love them some yogurt.

- I wish I could be off of work to pick up my kiddos from school right when the day is over :(

-NO problem…The new Michael Kors Runway watch in Brown…kind of in love.  It is a bit over $200 but I would gladly go into my pocket for this one.

5 Things I Love About California

I spent the weekend in California with my favorite aunt in the world for a much needed mini vacation.  In anticipation of my trip I didn’t shop for 3 weeks, I know it doesn’t sound that long but for me, its long.  So we shopped until we dropped, went to see Britney Spears, ate, shopped some more and I fell in love with a few things along the way.

The Weather – There are no words that can express how much I enjoyed the weather.  There is no humidity, its warm and sunny without being sweaty hot, my hair did amazing, waves and curls lasted all day, no frizzies etc… I wore my hair in soft subtle waves almost everyday and it held all days with lots of bounce and volume.

Nordstrom – I wish we had these amazing department stores in Louisiana.  They carry some really great items that people in the south can only get online and there is just something about being in this store that makes your shopping experience feel more luxurious.  I got a super cute Lodis Business Card holder and its an adorable addition to my business collection.

Outdoor Malls – This is something that would not work in Louisiana because of our rainy hot weather but outdoor malls are amazing, walking from store to store in an open sunny environment.  It makes shopping feel more like an outing than a closed mall does. We visited the Santa Monica 3rd Street Promenade.

Mexican Food -The Mexican food that I had while visiting was amazing, no tex mex variations on Mexican but real Mexican food and margaritas.  I had fajitas with the most delicious pinto beans I have ever had, they tasted like someone’s Mexican grandmother had been stiring them all day.  Delish!

Mountains - Living in Louisiana all of my life really makes me appreciate terrain that is different from my flat home.  The mountains that I saw were so beautiful, its so odd to look out while driving on the freeway and see a landscape of mountains.

Delicious Lasagna Recipe 8 Points Plus per serving

With a major craving for cheesy, hearty and filling pasta that wouldn’t go straight to my muffin top I made my famous (well its famous in my house) Lasagna, only 8 points plus per serving.

Here’s how I did it.

1 lb of lean ground beef 93/7
12 oven ready lasagna noodles
1 1/2 cups of part skim mozzarella cheese
2 cans of italian diced tomatoes
I large can of prepared tomato sauce ( I use Hunt’s garlic and herb)
salt
pepper
Italian Seasoing
Garlic Powder
Onions

Brown your meat with the onions and seasonings until fully cooked. Drain any excess fat.  Once cooked add in the two cans of tomatoes un drained and the entire can of tomato sauce, about 2.5 cups or so.  It look like a lot of sauce but don’t worry…the sauce is what cooks the oven ready noodles. Spray your 13 x 9 casserole dish with non stick spray and start your layers.  4 sheets of pasta, meat sauce, cheese, 4 sheets of pasta, meat sauce, cheese, 4 sheets of pasta, meat sauce, cheese.  Once complete bake at 400 for about 50 minutes to an hour or until the pasta is fork tender.

This lasagna is 8 Point Plus per serving and my dish is 8 servings,  Make sure to portion out the pan as it will be tempting to eat more than a single portion.

I pair my lasagna with garlic bread and either a salad or a green vegetable like green beans or broccoli.

This lasagna also freezes well.  I follow the exact same steps except that before I layer the pasta I make sure the meat sauce is at room temperature.  Even make your lasagna in a throw away pan with a lid and you will be so graeatful to have a go to meal one night when cooking is the last thing on your mind.

Food Find – Sam’s Choice Cheese/Jalapeno Stuffed Chicken Breast

New favorite food find coming at ya! Sam’s Choice: Three Cheese & Jalapeno Stuffed Chicken Breast.  I bought these a few weeks ago b/c I am always looking for a way to have a quick go to meal that is still great tasting and not too high in Points Plus Values.  We now love these chicken breasts and they are a vital part in our shopping trips and occur about twice a month in my meal rotation.

These chicken breasts are 6 points plus values which is pretty good for how decadent they are. They are filled with lots of gooey cheese and spicy jalapenos. I pair them with oven baked sweet potato chips, a green veggie, usually brocooli or green beans and garlic bread..YUM! Its a great meal that can be made within an hour and even though its gooey and cheesey it still makes you feel good about what you are eating.

The chicken breasts come in 2 packs  and are about $5 a pack. They come in different varieties as well if spciy is not your thing.  Try out the spinach and artichoke, mushroom and swiss or bacon and cheese. You will definitely need to calculate teh points plus values for each variety as they will vary.  I have only tried the cheese/jalapeno and spinach and artichoke ones both were great but the spinach and artichoke are a little bland.
